Fabulous Friday~The Week Ahead

After a crazy week, I enjoy a weekend when I can catch up and rest a little before the next week. I feel extra blessed when I can carve out a little time to prepare meals in advance (or atleast make a plan and grocery shop!). Some weeks are busier for me than others, has your summer been like that? During the busy times, I rely on the ‘reserves’ I’ve put aside (i.e. pantry staples, freezer meals or basic crock pot starter meals). We’ve been blessed with a nice garden bounty so far this year so that has helped me fill in nutritious foods when in a hurry. The other night I made “adventure pizza” for dinner. My kiddos just love when I prepare meals like that (I’ve also made “mystery soup” in the past). Basically, I had the ingredients left in my fridge, freezer and pantry to get dinner together as our shopping trip wasn’t until the next day. This is what I came up with: 3 prepared, whole wheat pizza crusts, leftover sausage and bacon, 2 types of cheese and some from fresh basil from the garden. The salad came from the garden as well with two different types of lettuce and a handful of chives sprinkled on top. I had a “dewlicious” melon waiting in the refrigerator for the perfect time to be sliced and served. Adventure pizza night, it was.
I came across this yummy, breakfast cookie recipe when searching for new/different recipes. Who wouldn’t want cookies and milk for breakfast? What kinds of things do you do on the weekends to prepare for the upcoming week?






We’re picking up our new puppy at 10 AM so that will be our weekend.

So enjoyed your post! Glad I’m not the only one who serves “mystery meals”. In our home I’ve had some hits and some misses. 1 hit was a total act of faith. I just grabbed what ever I had laying around in my fridge and put it all together not having a clue what I was in for. Cajun chicken baked with fresh red, green, yellow bell peppers, a yellow onion, mushrooms, and covered in fresh marjoram. No recipe, just instinct. At the time I had no idea what marjoram was, it was just given to me by our local CSA. It was so good! I was very thankful that meal and so was my family. (The previous mystery meal was a miss.
Molly says: Yay for marjoram! I think it may be an herb that isn’t used often because it doesn’t seem to be “popular.” But, it’s oh so yummy!
