Dear Midge,

Can you guess what my all time favorite chocolate treat is? I LOVE no bake cookies, they’re also known as preacher cookies. Have you ever read the history behind this cookie? Don’t you love it when great things happen by accident?

Whenever I’m feeling down and needing some chocolate goodness, this is my go-to treat. It’s easy to make, requires ingredients I usually have on hand and it takes very little time from the mixing bowl to my belly. As my children have gotten older, this recipe has become one of their favorites as well. I love working in the kitchen and teaching them the tricks-of-the-trade. What I love even more is when one of my children comes to me, asks if they could whip up a batch and then bring me some. What a blessing!

    So where’s the recipe?

    Molly says: The basic recipe for no-bake cookie is as follows.

    1 3/4 cup of white sugar
    1/2 cup of milk
    1/2 cup of butter
    4 Tablespoons of unsweetened cocoa powder
    1/2 cup of peanut butter (smooth or crunchy)
    3 cups of quick cooking oats
    1 teaspoon of vanilla extract

    ~Combine the sugar, milk, butter and cocoa powder in a saucepan (make sure it’s not too small!). Bring these ingredients to a boil and cook for 1 1/2 minutes. You don’t want to boil longer than that or the cookies will be too dry, don’t boil less than 1 1/2 minutes or the cookies won’t set up. Remove from the heat and add in the peanut butter, oats and vanilla extract. Drop by teaspoons onto wax paper and wait until they cool and harden. Enjoy!
